Coming to you from San Fransisco, Rachel Cooks Thai is a fairly self explanatory title for one of my favorite Thai food blogs. Inspired by her husband, who was born and raised in Thailand, be inspired as Cox perfects (through trial and error) their family’s favorite dishes.

Describe your cooking style in three words: Simple. Flavorful. Delicious.
What’s your signature dish? Khanom Jeen Nam Ya, a traditional Thai dish of rice noodles topped with a rich fish curry and accompanied by a soft-boiled egg, various steamed and fresh vegetables, and fresh sprigs of lemon basil.
What do you think is the most underrated ingredient? Kaffir lime leaves. They add so much unique citrus flavor to Thai and Southeast Asian dishes, it’s a shame they aren’t used more in other cuisines.
What’s the best cooking advice you’ve ever received? Taste as you go.
If you could share a meal with anyone in history who would it be? “The boyfriend”—now officially known as “hubby”—because I love spending time with him over a good meal
