What’s your signature dish? Layered Pavlova, my Christmas Day version of a beloved dessert.
What do you think is the most underrated ingredient? Salt. It can bring a dish to life.
What’s the best cooking advice you’re ever received? “It’s just cooking, Christina. If you haven’t got that exact ingredient, try something else.” My mother encouraged me to free-form in the kitchen.
If you could share a meal with anyone in history who would it be? Truman Capote, pre the publication of La Côte Basque in Esquire, which marked his decline into drugs and alcohol. A lot of writers aren’t great conversationalists but Truman was a celebrated wit and story-teller in real life.
