Describe your cooking style in three words: Proper home cooking.

What’s your signature dish? Crispy skin salmon with wasabi butter and green beans.

What do you think is the most underrated ingredient? You simply can’t beat salted butter. As Julia Child famously said, “If you’re afraid of butter, use cream.”

What’s the best cooking advice you’re ever received? My grandmother used to say, “You can’t make a silk purse out of a sow’s ear.” It’s the same with cooking. Start with quality ingredients, treat them well, cook with love.

If you could share a meal with anyone in history who would it be? I’d love to dine with Marco Pierre White. I can’t decide if I’d prefer to share a meal with the white tot thirty-something Marco, who posed for Bob Carlos Clark wearing a shark and smoking a cigarette, or the present day Marco who handed back his Michelin stars, is generous with his knowledge and recognizes really good food. Regardless, he’d be a fabulous dinner companion at any age.
