Describe your cooking style in three words: Authentic Middle Eastern.

What’s your signature dish? Musakhan—Palestinian Sumac Chicken with Sautéed Onions.

What do you think is the most underrated ingredient? Cardamom, I love the fact that it is intensely aromatic, with its almost smoky unique taste. I use it in dough recipes, in desserts and it is a wonderful way to spice up your morning cup of tea. Try adding a little to any chocolate recipe and you’ll be amazed at how much of a difference it can make.

What’s the best cooking advice you’ve ever received? Don’t be afraid to laugh at your own mistakes.

If you could share a meal with anyone in history who would it be? I would share a meal with my English teacher from high school. She was an amazing person, so full of life despite the fact that she was fighting breast cancer. She has always been an inspiration to me. Even after her diagnosis and during her treatment, she never gave up. She continued teaching, and went on with pursuing her masters degree but above all, she had a wonderful attitude about everything, she was always beaming with a smile and she celebrated every day and every little detail.
